We love, love, love these little bites! They don’t take much to make and they’re great as an after-school snack for your kiddos. Make them in advance and keep them in the fridge for when you need a pumpkin power-up!
2/3 cup N+B Vanilla Spice Whole Food Shake
1 cup canned pumpkin
3 cups old fashioned oats
4 tbsp pure maple syrup
1/2 tsp cinnamon
1/2 tsp pumpkin pie spice
1 tsp vanilla extract
1 tbsp flax seed
1 cup pecans, chopped
1/2 cup vegan mini chocolate chips
1. In a large bowl, fold together N+B Vanilla Spice Whole Food Shake, pumpkin, oats, maple syrup, cinnamon, pumpkin pie spice, vanilla, flax seed, pecans, and chocolate chips.
2. Using clean hands, roll dough into 1-inch balls.
3. Place balls on a pan lined with wax paper. Allow to chill in the fridge for 30 minutes before serving.
